Ingredients
  

  • 2 lbs ground beef
  • 1 envelope Lipton Onion Soup Mix
  • 2 eggs
  • 1 cup bread crumbs
  • ¾ cup water
  • cup ketchup for meatloaf mixture
  • ½ teaspoon ground black pepper
  • 1 cup ketchup for glaze
  • ¼ cup brown sugar for glaze
  • ½ tablespoon ground mustard for glaze

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking dish with foil and spray with non-stick spray.
  • In a large mixing bowl, whisk together the onion soup mix, eggs, water, and ⅓ cup ketchup until well combined.
  • Add ground beef, bread crumbs, and black pepper. Gently mix until just combined—avoid overmixing.
  • Form the meat mixture into a loaf and place in the prepared pan.
  • Bake for 1 hour to 1 hour 15 minutes, or until internal temperature reaches 165°F.
  • While meatloaf is baking, make the glaze: In a small saucepan, combine 1 cup ketchup, brown sugar, and mustard. Heat over medium heat, stirring until sugar dissolves.
  • Brush glaze over the cooked meatloaf and let it sit for a few minutes before slicing.

Notes

For best results, let the meatloaf rest for 5-10 minutes before slicing to lock in juices. Great with mashed potatoes and green beans. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat with a splash of water and cover with a damp paper towel to prevent drying out.
