Ingredients

Scale

Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs (or breasts)
  • 2 tbsp oil (peanut oil or vegetable oil)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • ½ cup smooth peanut butter (natural preferred)
  • 1 cup coconut milk
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey or brown sugar
  • 1 tbsp lime juice or vinegar
  • ½ tsp chili flakes or sriracha (optional, for heat)
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp turmeric
  • ½ cup chicken broth (adjust for sauce consistency)
  • Salt and pepper to taste

Garnish & Serving Suggestions

  • Chopped peanuts
  • Fresh cilantro
  • Lime wedges
  • Jasmine rice, brown rice, or naan

Instructions

  • Prepare the Chicken

    • Cut the chicken into bite-sized pieces and season with salt and pepper.
    • Heat oil in a pan over medium heat and brown the chicken on both sides (about 4-5 minutes). Remove and set aside.
  • Sauté the Aromatics

    • In the same pan, add chopped onions and sauté until softened.
    • Add minced garlic and grated ginger, cooking until fragrant (about 1 minute).
  • Make the Peanut Butter Sauce

    • Stir in peanut butter, coconut milk, soy sauce, honey, lime juice, and spices.
    • Mix well and let the sauce simmer for 2-3 minutes. Add chicken broth if the sauce is too thick.
  • Simmer with Chicken

    • Return the cooked chicken to the pan, coating it in the sauce.
    • Let it simmer for 8-10 minutes until the chicken is fully cooked and the sauce is creamy.
  • Serve & Enjoy

    • Garnish with chopped peanuts and cilantro.
    • Serve with rice, noodles, or flatbread.

Notes

  • For a spicier kick, add more chili flakes or sriracha.
  • Make it nut-free by substituting peanut butter with sunflower seed butter or tahini.
  • For a lighter version, use low-fat coconut milk and lean chicken breast.
  • For extra flavor, toast the spices before adding them to the sauce.
